Stay at Home - Chopped 1

Hi All, Welcome to Stay Home Chopped 2020. Here I am going to showcase different healthy recipes with items that we have in our pantry, fridge & freezer! Please feel free to send me more ingredient ideas! Today's we made two different dished.


Dish 1



We used up Cabbage, Carrots, red onion, Eggroll wraps, Left over grilled chicken and frozen shrimp. With these, we made eggrolls; chicken, shrimp and vegetarian.


  1. I shredded the cabbage, carrots and red onion and then added soy sauce, garlic, rice vinegar & Lime. You do not have to add that to your cabbage mix, but I do like a little flavor. Note, once you add vinegars or salt based sauces to vegetables, the longer they sit in the juices, the softer they get and the more of the flavor they will absorb.

  2. I took the grilled chicken, cubed in and then I put it through the food processor to break it down. I did this with the shrimp as well.

  3. The egg roll wraps, I place it down as a diamond; fill the middle with the food processed meat or shrimp and then add the "coleslaw" and roll. To keep the eggrolls together, we wet the edge of the eggroll wraps. You can use water or egg to keep the wraps together.

  4. Turn on oven to 375 degrees. Once you are about to put your eggrolls in, brush them with butter or olive oil to brown them up (healthier option, olive oil). Leave them in for about 30 minutes or till they brown.


Dish 2



Vegetable Stir Fry for the people. I would usually like to serve this with rice, but my kiddos are little and rice is ...... messy. I found this Egg Noodles in the bottom of my pantry and thought..... Why Yes , yes I am.


  1. I cooked the egg noodles as directed on package.

  2. Once they were done, I drained the noodles, returned the pot to the stove and cooked the chopped mushrooms with garlic. I add a little bit of water at a time to help with the mushrooms sticking. If the pan sizzles when you add water, you are good but if you add too much water, it will start to boil instead or sautee.

  3. I microwave (omg yes microwave) the frozen bag of veggies for the lowest time (4 minutes in this case). I feel like stir frying frozen veg usually turn mushy for me.

  4. The 1/4 cup peanut butter (or any nut butter) , 3 tbsp. soy sauce (or tahini) , 2 tbsp. maple syrup, 2-3 tbsp. garlic chili sauce, 1 lime and 1/2 cup of water make the peanut sauce. NOTE, mix everything together without the water and make sure you like the flavor. Then slowly add the water into the mix until you reach a consistency you like.



Family note : out of all three kids, each one loved a different component of these dishes.


Nutrition Note: Frozen vegetables are great because they are picked at prime season. Get them in anyway you can!
